It is now Sunday - should I e-mail him my assignment questions or is it rude to e-mail a professor who might still be sick? Should I wait a couple of days? And if I wait when should I e-mail him? A part of the assignment is that we have to both e-mail him and meet him in person at least once to talk about our final essay which is worth 50 percent of our final grade. Everyone in the class has to do this.

Email the damned assignment, because you will forget about it.

You should email your assignment before the deadline, whenever that may be. Email is not a phone call. Trust me; your professor will not be looking at email when he doesn't want to -- which would include weekends and when he is ill. Your assignment will sit quietly in his inbox until he is ready to look at it.
